Frozen chicken drummettes are readily available from your grocer's freezer section in 10 pound bags.They are inexpensive and store well in your freezer. You will need a deep skillet, Dutch oven or deep fryer for this recipe. Use any type of vegetable oil such as Wesson Oil. Use only enough oil ,so the wings will be covered when added to the oil. Always be careful when handling hot oils.

Thaw desired amount of wings and rinse thoroughly.
Lightly dust your wings with all purpose flower.
Carefully add wings to oil that has been pre-heated to 365 F. Do not add too many wings at a time so the oil will maintain its temperature.
Mix 3 ounces of Blue's Habanero Reserve Hot Sauce (+/- half bottle) with 1 tablespoon of lightly salted butter. Warm this in a sauce pan to melt the butter. For large quantities of wings use more sauce and butter, but keep the ratio the same.
Wings will float to the top of the hot oil and be golden brown when they are done. This will take approximately 5 to 7 minutes. Carefully remove wings and drain on paper towels. Pour sauce in a large Tupper Ware container, or the equivalent. Add wings to sauce, cover and shake to coat wings. Serve with celery and Blue Cheese.
