Here is a very easy side dish that is great for tailgating or any type of outdoor event. For a crowd, just double the recipe.
1 can corn that has been drained
1 cup sharp cheddar cheese
1/2 medium sized red pepper chopped
1/2 medium sized Vidalia onion or other sweet onion chopped
1 heaping tablespoon mayonaise
salt and pepper to taste
Mix all ingredients together and refrigerate for 3 to 4 hours. Just before serving, smash up 1/2 bag of chile cheese Frito's and mix into the salad. If you prefer, just have a bowl of the crunched up Frito's on the side and let each individual add their own. (This prevents the Frito's from getting soggy). Hot sauce is optional.
